Bourbon Barrel Aged Chimay Blauw, re-brewed in wooden barrels in which Bourbon Willet Pot Still Reserve previously matured. This powerful and complex beer opens with a rich aroma of oakwood, vanilla and warm caramel, complemented by subtle spiciness, blackberry and ripe date. The taste shows pronounced wood character in balance with sweet caramel and vanilla notes, supported by a pleasant alcohol warmth. A fine bitterness and light smoky note provide tension, while the finish ends warm, creamy and subtly fruity. This 10.5% strong beer comes from the kitchens of Bières de Chimay, one of the world's most renowned Trappist breweries. Since 1862, the monks at the Abbey of Scourmont in Chimay, Belgium, have brewed authentic Trappist beers known for their rich and complex character. This limited edition from 2026 is a special version of their legendary Chimay Blauw, in which the characterful base adapts perfectly to the bourbon barrels. The American bourbon influence adds an extra dimension to the traditional Trappist heritage, resulting in a beer with true personality and depth.
